Apricot And Pork Salad

Ingredients:

  Amount  Measure       Ingredient -- Preparation Method

     3/4         Pound  pork chop (about 2 small or 1 large)
  1              Quart  torn assorted greens
     3/4         Pound  fresh ripe apricots -- cut into
                        apricots -- (..5 to 6)
     3/4           Cup  walnut halves -- toasted
     1/2           Cup  vegetable oil
     1/3           Cup  red wine vinegar
  2        Tablespoons  sugar
     3/4      Teaspoon  tarragon -- crumbled
     1/4      Teaspoon  marjoram -- crumbled
     1/4      Teaspoon  thyme -- crumbled
 
Preparation:

Broil pork chops for 5-6 minutes on each side or until done. Or if preferred, place pork in microwave-safe dish with 1/4 inch water. Cover, cook on high power fir 3-5 minutes or until done; cool...Cut cooked pork into narrow silvers. Place greens in salad bowl. Top with pork, apricots and walnuts. Combine oil, vinegar, sugar, tarragon, marjoram and thyme in a small jar. Shake well. Before serving, pour desired amount of dressing over salad. Refrigerate remaining dressing for later use...
