Breadfruit Chowder

Ingredients:

  Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
  2       rashers of    bacon, diced into small pieces
  1       medium        onion, chopped finely
  1                     carrot, diced finely 
  2       cups          breadfruit, washed, peeled and chopped
  3       cups          chicken stock
  1       cup           cream
                        salt and pepper to taste 
 
Preparation:

1. Fry chopped bacon until it starts to go crisp

2. Add the onion and cook until golden.

3. Stir in the carrot and breadfruit, add stock and bring to boil.

4. Reduce to a simmer until the vegetables are soft.

5. Blend to a smooth puree.

6. Add cream and stir.

7. Check seasoning, add salt and pepper to taste.

8. Sprinkle with parsley and serve warm.
