Plum Tomato Salsa with Sherry Vinegar

Ingredients:

   6                    Plum tomatoes, peeled,
                        Seeded, and cut into 1/2"
                        Dice
   1                    Medium shallot, sliced thin
   1                    Serrano chile, seeded and
                        Sliced thin
   2       tb           Sherry vinegar
     1/2   c            Olive oil
     1/2   ts           Chopped fresh thyme, or
                        1/4 ts dried
   1       tb           Chopped fresh cilantro
   1       tb           Chopped fresh parsley
                        Salt and ground black
                        Pepper to taste.
 

Preparation:

Mix all ingredients together in medium bowl. Serve within 2 hours.
