Mango-Kiwi Salsa

Ingredients:

  3              small  mangos -- pared & pitted,
                        -- chopped
  3                     kiwi fruit -- peeled and chopped
  1             medium  red bell pepper -- diced
     1/4           cup  chopped shallots
  2        tablespoons  fresh lemon juice
  2          teaspoons  olive oil
     1/4      teaspoon  salt
     1/8      teaspoon  ground red pepper
 

Preparation:

In large bowl combine mangos, kiwi fruit, red bell pepper, shallots, lemon juice, olive oil, salt and hot red pepper; toss together until well combined. Cover and refrigerate at least 2 hours. Serve with pork roast.
