Ingredients:

  2               cans  black beans     (15 oz.) rinsed and
                        drained
  1                 c.  frozen yellow corn kernels      defrosted
                        and
                        drained
  1                 c.  frozen white shoepeg corn kernels
                        defrosted and
                        drained
                        « c. fresh cilantro     chopped
  1                     jalapeno        seeded and minced
  1              large  tomato  peeled and chopped
  2             cloves  garlic  minced
  1              large  sweet onion (Bermuda    Vidalia, etc.),
                        chopped
  3                     green onions    thinly sliced
  1               tsp.  chili powder
  1              Tbsp.  ground cumin
  3              Tbsp.  lime juice
     1/4          tsp.  ground black pepper
  1               Dash  cayenne pepper
                        Salt    to taste
 

Preparation:

Thoroughly, but gently, mix everything together. More or less of anything can be added to suit your own taste. refrigerate at least 4 hours to blend flavors before serving. Let come to room temperature before serving with baked tortilla or pita chips.
