Ingredients:

     1/2      teaspoon  ground coriander
     1/2      teaspoon  ground cumin
     1/8      teaspoon  black peppercorns
  1              pinch  red pepper
  1                     ground cloves
     1/2      teaspoon  fresh ginger root
  1           teaspoon  ground allspice
  1              pinch  salt
  1         tablespoon  ketchup
     1/2      teaspoon  hot pepper sauce
  2          teaspoons  light soy sauce
  1           teaspoon  brown sugar
  1         tablespoon  hot water
  2          teaspoons  vegetable oil
  1         tablespoon  parsley

     1/4           cup  chutney
 

Preparation:

Mix everything except the burgers and the chutney together; put in a small saucepan and place over moderate heat until the aroma becomes quite strong, about 2 minutes, stirring frequently. Transfer to a bowl. Prepare the burgers according to their recipe, adding half the spice mixture to the ground meat. Rub the remaining spice mixture on the surface of the burgers and set aside for 10 minutes before grilling. Top the finished burgers with chutney.
