Mixed Greens With V-8 Vinaigrette

Ingredients:

  4          teaspoons  balsamic vinegar
                        salt and fresh ground pepper to taste
     1/4           cup  olive oil
  3        tablespoons  v8 juice
  2                     garlic cloves -- minced
  2             medium  tomatoes -- sliced 1/4-inch
                        thick
  3               cups  mixed greens
 

Preparation:

To make vinaigrette, in a small bowl or jar, whisk or shake vinegar, V-8 juice, oil, garlic, salt and pepper until blended. Refrigerate until needed. Place greens in a bowl and toss with vinaigrette. Divide among salad plates and garnish with tomatoes. Prep Time: 10 minutes Makes: 4 servings
