Ingredients:

     1/2         Small  yellow onion -- chopped
     1/4             C  fresh parsley -- chopped
     1/4             C  scallions -- chopped (green part
                        only)
  1                Tbl  egg white (larger amount of egg white -- (1 to 2)
                        makes the dressing
                        thicker)
  1                Tbl  fresh lemon juice
  1                Tbl  white vinegar
  1                Tsp  tarragon
     1/2           Tsp  white pepper
     1/2           Tsp  salt
     1/4           Tsp  sugar
     1/2           Tsp  garlic -- chopped
  3                Tbl  olive oil
  1                Cup  vegetable oil
 

Preparation:

Chop onion, parsley and green portion of scallions. Set aside In bowl of food processor or in blender, put egg white, lemon juice, white vinegar, tarragon, pepper salt, sugar and garlic; pulse to blend. Pour olive and vegetable oils through feed tube and pulse until dressing is emulsified. Mix in onion, parsley and scallions
