Chili-Lemongrass Dressing

Ingredients:

     1/2           cup  lemon juice
     1/4           cup  tamari soy sauce
     1/3           cup  fish sauce -- (nuocnam)
     1/4           cup  rice vinegar
  1                     jalapenos -- sliced (1 to 2)
  1              piece  fresh ginger root -- (3 inch) peeled and
                        thinly sliced -- (1 ounce)
  1              stalk  lemongrass -- thinly sliced
                        (1 1/2 ounces)
  15            sprigs  cilantro -- leaves and stems
                        included
     1/2      teaspoon  garlic -- chopped
 

Preparation:

Combine all ingredients and 1/2 cup water in a food processor or blender and puree until smooth. Makes 2 cups.
