Creole Cream Cheese Ice Cream

Ingredients:

  2               cups  heavy cream
     1/2           cup  sugar
     1/2      teaspoon  vanilla
     1/8      teaspoon  salt
  5                     egg yolks
  1 3/4           cups  creole cream cheese - not
                        philadelphia-style -- (or use drained
                        ricotta or small curd cottage cheese)
  1               pint  fresh strawberries -- rinsed, hulled and
                        quartered
 

Preparation:

Combine first four ingredients over medium-high heat. Beat egg yolks. Add cream mix to eggs, 1/4 amount at a time, whisking after each addition. Pour mixture into saucepan and cook, stirring constantly with a wooden spoon two to three minutes over medium-high heat until mixture coats spoon. Add cream cheese to egg mixture and whisk until thoroughly combined. Stir in strawberries. Pour into 9 x 5 x 3 glass dish and cover with plastic; freeze 8 hours.
