Cantaloupe And Orange Ice Cream

Ingredients:

  1             medium  cantaloupe -- cut in half, seeds
                        removed
     1/3           cup  strained orange juice
     1/3           cup  strained lemon juice
  2        tablespoons  honey - warm in hot water
  1                     egg white
     1/2          pint  whipping cream -- (1 cup)
 

Preparation:

In a food processor, pur‚e pulp of cantaloupe. You should have 2-1/2 cups of pur‚ed pulp. Lemon and orange juice should be 2/3 cup total; Mix the warmed honey and sugar with the melon and juice and freeze until soft and slushy. Whip cream until stiff and whip egg white until stiff. Fold cream and egg white gently into fruit mixture and refreeze. Remove from freezer 3/4 hour before serving so that ice cream is not too hard.
