Skillet Fish Dinner

Ingredients:

1         teaspoon      grapeseed oil
2                       sweet peppers (green, red, or yellow, cut into narrow strips
1         medium        onion, peeled, sliced, and separated into rings
1         pound         orange roughy fish fillets cut in 4 serving pieces
2         tablespoons   vegetarian vegetable soup base
                        lemon pepper -- to taste
 

Preparation:

Heat grapeseed oil in skillet. Add pepper strips and onions; top with fish fillets. Sprinkle soup base evenly over top. Add lemon pepper to taste. Cover and cook over low heat 12 minutes. Uncover and continue cooking until fish is done (flakes easily when touched with fork).
