Spicy Pork In Pita Bread

Ingredients:

  1              pound  ground prok
  1              small  onion -- chopped
  1              clove  garlic -- crushed
     1/2      teaspoon  ground cumin
     1/4      teaspoon  salt
     1/4      teaspoon  pepper
  4                     whole         wheat pita breads
                        shredded lettuce
  1             medium  tomatoe -- chopped
                        ***YOGURT DRESSING***
     1/2           cup  plain yogurt
  1         tablespoon  fresh mint -- chopped
  1           teaspoon  sugar
     1/4         small  cucumeber -- seeded and chopped
 

Preparation:

1. Make the dressing: combine all ingredients and refrigerate. 2. Make the filling: Cook the ground pork, onion and garlic in a 10 inch skillet over medium heat, stirring occasionally, until pork is brown; drain. 3. Stir in cumin, salt and pepper. 4. Split each pita halfway around with a knife to create a pocket. Spoon pork mixture into pockets. Top with tomato, lettuce and yogurt dressing.
