Ingredients:

  24            slices  brown or white bread
                        Tomato Curry & Orange Butter
                        FILLING:
  1                cup  ground cooked chicken breast
  1                cup  ground lean ham (not smoked)
     1/2           cup  heavy cream -- to bind
  1                     scallion -- finely minced
                        Salt & freshly ground pepper
 

Preparation:

Combine the chicken, ham and scallion in a bowl. Season with salt and pepper and bind with enough heavy cream to form a thick, spreadable paste. Lightly butter 10 to 12 slices of the bread with the Curry Butter and spread with a layer of the chicken and ham filling. Top with a second slice of bread. Crust and cut as desired.
