Ingredients:

  16                    mild green chiles
  6               cups  jack cheese
  12                    egg yolk
  2        tablespoons  water
  2        tablespoons  flour
     1/2      teaspoon  salt
  12                    egg white
  1                cup  flour
  8               cups  tomato broth
 

Preparation:

Stuff the chiles with jack cheese, set aside combine egg yolks and water-mix well combine 2 tablespoons flour and salt add to yolk mixture-mix well fold whites into yolk mixture heat oil to 360 degrees dredge chiles in flour, shake off excess coat with egg batter, allowing excess to drip back into bowl place 2-3 chiles into oil and deep fry until lightly browned on all sides remove to drain on a cooling rack and blot with paper towels repeat with remaining chiles and batter ladle 1/2 cup tomato broth into each serving bowl place 1 chile into each serve hot
