Ice Cream Fruit Punch

Ingredients:

     1/2        Gallon  vanilla ice cream -- softened
  6 1/4           Cups  apricot nectar -- (46oz.) chilled
  6 1/4           Cups  pineapple juice -- (46oz.) chilled
     3/4           Cup  frozen orange concentrate -- (6oz.) thawed
  1              Quart  sparkling water -- chilled
 

Preparation:

Using a small ice cream scoop, dip half the ice cream into tiny scoops; hold in freezer. In large bowl, beat remaining ice cream with juices, Pour into punch bowl. Add remaining ice cream with juices. Pour into punch bowl. Add sparkling water. Float small scoops of ice cream over top.
