Creamy Chickpea Curry

Ingredients:

  2          teaspoons  vegetable oil
  1           teaspoon  mussaman curry base
  1             medium  onion
  3                     garlic
  2          teaspoons  soy sauce
  1                can  lite coconut milk
  1                can  garbanzo beans
  1             medium  tomato
     1/4           cup  fresh basil
  2          teaspoons  sugar
 

Preparation:

1. heat oil in saucepan. 2. add mussaman curry base, onion, garlic. saute briefly. 3. add lite coconut milk and soy sauce. bring to a boil. 4. keep at boil for five minutes, stirring occasionally. 5. add garbanzo beans (chickpeas), tomato, basil and sugar. bring back to simmer. 6. stir together well and serve over rice.
