MEXICAN BREAKFAST VENISON SAUSAGE

Ingredients:

  1 1/2         pounds  venison (red meat only)
     3/4         pound  pork fat or bacon
  3        tablespoons  balsamic vinegar
  2                     garlic cloves   minced
  3        tablespoons  paprika
  1 1/2      teaspoons  kosher salt
  1           teaspoon  chili powder
     3/4      teaspoon  ground cumin
     1/2      teaspoon  brown sugar
     1/2      teaspoon  crushed red pepper
     1/2      teaspoon  ground coriander
     1/4      teaspoon  ground red pepper
     1/8      teaspoon  ground white pepper
     1/8      teaspoon  ground cloves
 

Preparation:

Process venison and pork in a food processor or meat grinder until finely ground (or ask your butcher to do this); place in a large bowl. Add vinegar and remaining ingredients, mixing by hand until blended. Shape into 2-inch patties, and place on a rack in a shallow pan. Bake at 350 degrees for 20 minutes or until done.
