Ingredients:

  2               cups  skim milk
     1/2      teaspoon  salt
     1/4           cup  cream of rice
  1         tablespoon  sugar
     1/8      teaspoon  cinnamon
     1/8      teaspoon  nutmeg
     1/8      teaspoon  powdered ginger
     1/4           cup  dark molasses
     1/4           cup  raisins -- optional
 

Preparation:

Scald 1 1/4 cups milk. Add salt, then slowly sprinkle in cream of rice and stir constantly for 1 minute. Remove from heat, cover and let stand 4 minutes. Stir in sugar, spices and molasses. Pour into a lightly oiled 1 quart baking dish. Top with remaining 3/4 cup cold milk. Bake in a preheated 275 degree oven 2 hours. Stir well after 1/2 hour and again at a hour. Add raisins after first hour. Cook 1/2 hour before serving. Serve warm with Lemon sauce or low fat whipped topping. Makes 4 servings.
