Indian Pudding - Complete Dessert

Ingredients:

   4      cups          milk
     1/2  cup           light molasses
     1/2  cup           yellow cornmeal
     1/4  cup           sugar
   1      teaspoon      ground cinnamon
     1/2  teaspoon      ground nutmeg
     1/2  teaspoon      salt
   2                    eggs -- beaten
   2      tablespoons   orange peel -- grated
                        ice cream -- (optional)
 

Preparation:

1. Bring milk and molasses to scalding in 1 1/2-quart saucepan. 2. Combine cornmeal, sugar, cinnamon, nutmeg and salt in small mixing bowl; gradually add to milk-molasses mixture, stirring constantly. 3. Cook over low heat, stirring occasionally, 5 to 10 minutes or until mixture thickens and comes to a boil. 4. Blend a little hot mixture with egg; return all to pan and cook 1 additional minute. 5. Stir in orange peel; cover and chill. 6. Serve with ice cream, if desired.
