Fresh Plum Tapioca - Complete Dessert

Ingredients:

   3      tablespoons   quick-cooking tapioca
     1/2  cup           sugar -- divided
     1/8  teaspoon      salt
   2      cups          milk
   1                    egg -- separated
   1      cup           sliced fresh plums
     3/4  teaspoon      pure vanilla extract
 

Preparation:

1. Mix tapioca, 6 tablespoons sugar and salt in a medium saucepan. 2.Stir in milk, egg yolk and plums; let stand 5 minutes, then heat to boiling over medium heat, stirring constantly. 3.Cool. 4.Beat egg white until soft peaks form; beat in remaining sugar and beat until stiff peaks form. 5.Gently fold egg white into cooked plum mixture; stir in vanilla and let stand 20 minutes. 6.Chill; garnish with slices of fresh plums.
