Corn Pudding - Bell

Ingredients:

   2      cups          fresh corn kernels
   2      tablespoons   butter
     1/2  small         onion -- chopped
     1/4  cup           minced green or red bell peppers
   2                    eggs -- lightly beaten
   2      cups          milk -- hot
     1/2  teaspoon      salt
     1/8  teaspoon      black pepper
     1/8  teaspoon      paprika -- for garnish
 

Preparation:

Heat oven to 350F. Saute onion in butter until light golden. Cut kernels from cob or use thawed frozen corn. Butter a baking dish. Mix all ingredients together. Sprinkle top with paprika and bake for about 40 minutes, or until the pudding sets up firm.
