Salsa Di Pomodoro

Ingredients:

4         tablespoons   olive oil -- virgin
1         large         yellow onion -- finely chopped
3         garlic        cloves -- finely chopped
3 1/2     pounds        tomatoes -- crushed
2         cups          water
1         cup           dry red wine
4         tablespoons   tomato paste
1         teaspoon      oregano
1         teaspoon      salt
1/2       teaspoon      fresh black pepper
 

Preparation:

Heat oil in a wide heavy pan, and fry the onion until it is soft and transparent. Add the garlic and fry until it is golden. Add rest of ingredients, and simmer the sauce, uncovered, over very low heat for 3 hours, stirring occasionally. Use on baked pasta or on big stubby boiled pasta.
