Caribbean Steamed Fish

Ingredients:

  1                cup  plain yogurt
     1/2           cup  red pepper flakes
  1           teaspoon  ginger
  1                     bay leaf
  2                     clove
     1/2      teaspoon  ground cinnamon
     1/4      teaspoon  sugar
  1           teaspoon  unsalted butter
  1              pound  firm white fish fillet
 

Preparation:

combine ingredients (except fish)-mix well pour over fish cover and chill for 6-24 hours, turning occaisionally drain well, discarding marinade place fish onto a plate and place into a bamboo steamer place over boiling water and steam for 10 minutes, until tender and opaque in the thickest part of fish serve hot
