Ingredients:

     1/3           Cup  sun dried tomatoes
  1 1/2           Cups  all purpose flour*
     1/3           Cup  grated Parmesan cheese
  1                 Tb  sugar*
  2                Tsp  baking powder*
  2                Tsp  dried oregano
     1/2           Tsp  salt
     1/4           Tsp  pepper*
     1/4           Cup  milk
     1/3           Cup  olive oil
  1                     egg
  8             Slices  pepperoni
     1/4           Cup  diced green pepper
     1/4           Cup  grated mozzarella cheese
 

Preparation:

First the tomatoes must be softened by steeping in a little boiling water for about 10 minutes. Afterwards, drain them well and cut into dice. In one bowl combine the dry ingredients: flour, Parmesan, sugar, baking powder, oregano and salt and pepper. In a second bowl, mix together the wet ingredients: milk, oil, egg and diced tomatoes. Pour this over the dry ingredients and lightly mix. Spoon into prepared muffin cups and top with the pepperoni, pepper and mozzarella. Bake at 375f for about 25 minutes or until cooked through. This recipe makes 8 nice size muffins.
