Ingredients:

   2      Cups          All-Purpose Flour
   1 1/4  Cups          Granulated Sugar
   2      Teaspoons     Baking Soda
   2      Teaspoons     Cinnamon
     1/2  Teaspoon      Salt
   2      Cups          Carrots -- grated
     1/2  Cup           Raisins
     1/2  Cup           Walnuts -- chopped
     1/2  Cup           Shredded Coconut
   1      Medium        Apple -- peel/core/grate
   3                    Eggs
   1      Cup           Vegetable Oil
   2      Teaspoons     Vanilla
 

Preparation:

In a large bowl sift together flour, sugar, soda, cinnamon and salt. Stir in carrots, raisins, nuts, coconut and grated apple. In another bowl, beat the eggs; add oil and vanilla. Add to dry ingredients and stir just until combined. Spoon into greased muffin cups, or well greased muffin tin, filling to top. Bake in oven preheated to 350F (180C) for about 25 minutes or until tops spring back when lightly touched. Let cool in pans for five minutes, then turn them out on to a rack, and let them cook completely. Makes about 15 large muffins.
