Mocha Chocolate Chip Muffins

Ingredients:

     1/4           cup  boiling water
  1         tablespoon  instant coffee
     1/2           cup  buttermilk
     1/2           cup  vegetable oil
  2              large  eggs
  1           teaspoon  vanilla extract
  1 3/4           cups  all purpose flour
     1/2           cup  sugar
     1/2           cup  packed dark brown sugar
  3        tablespoons  unsweetened cocoa powder
  1           teaspoon  ground cinnamon
  1           teaspoon  baking powder
  1           teaspoon  baking soda
     1/2      teaspoon  salt
  1 1/2           cups  milk chocoate chips
 

Preparation:

Preheat oven to 375 degrees. Line 12 muffin cups with paper or foil liners. Mix water and coffee powder in large bowl until coffee powder dissolves. Add buttermilk, oil, eggs and vanilla and mix well. Mix flour, both sugars, cocoa powder, cinnamon, baking powder, baking soda and salt in medium bowl. Add to buttermilk mixture and stir just until blended. Stir in chocolate chips. Divide batter equally among prepared muffin cups. Bake until tester inserted into center of muffins comes out clean, about 25 minutes. Transfer muffins to rack and cool. Prep Time: 15 minutes Cook Time: 25 minutes Makes: 12 muffins These muffins are absolutely great for breakfast or served in a basket at your next brunch buffet.
