Red Beet Pickled Eggs

Ingredients:

1 large glass pickle jar
1 cup apple cider vinegar 
1 cup sugar
3-4 cans sliced red beets
1 dozen peeled hard boiled eggs 
1 medium onion thinly sliced 
Add water, if needed
 

Preparation:

In a large glass pickle jar, combine 1 c. apple cider vinegar and 1 c. sugar. Add 3-4 cans sliced red beets, 1 doz. peeled hard boiled eggs, and one med. onion thinly sliced. Add water, if needed, to ensure the eggs are fully covered. Keep in refrigerator. It takes at least 3 days to pickle. So, for the first 3 days, I usually gently invert and shake the jar to ensure all ingredients are mixed. Enjoy!
