White Chocolate Mousse Parfaits

Ingredients:

1         package       (4-serving size) vanilla pudding and pie filling mix (not instant)
1 1/2     cups          milk
1         package       (6 ounces) white baking bars, cut into pieces
1/4       teaspoon      rum extract
1         cup           whipping (heavy) cream
1                       mango, peeled and cut up
2                       kiwifruit, peeled and sliced
1         cup           sliced strawberries
1         tablespoon    sugar
 

Preparation:

1. Prepare pudding mix as directed on package for pudding, except use 1 1/2 cups milk. When pudding is boiling, remove from heat. Stir in baking bar pieces until melted. Stir in rum extract. Cool slightly. Place plastic wrap directly on top of pudding. Refrigerate about 2 hours or until chilled. 2. Beat whipping cream in chilled medium bowl with electric mixer on high speed until stiff. Fold whipped cream into pudding mixture. 3. Mix mango, kiwifruit and strawberries in medium bowl. Sprinkle with sugar. Let stand 10 minutes. 4. Layer pudding mixture and fruit in parfait glasses. Serve immediately, or refrigerate until serving time.
