Dutch Strawberry Tarts

Ingredients:

  2        tablespoons  unsalted butter
  3                     egg
     1/2           cup  flour
     1/2           cup  milk
  2        tablespoons  vegetable oil
     1/4      teaspoon  almond extract
     1/4           cup  orange marmalade
  4               cups  fresh strawberry
  1           teaspoon  fresh lemon juice
     1/4           cup  powdered sugar
  2               cups  cream
 

Preparation:

1. Place 1 teaspoon butter into each of six mini tart pans place pans into a cold oven, turn oven on to 400 degrees. 2. Combine eggs, flour, milk, oil, and almond extract in a mixer bowl beat until smooth. 3. Remove pans from oven divide batter evenly between pans 4. Bake @ 400 degrees for 15-20 minutes, until golden and puffy 5. Melt marmalade in a saucepan, over a low flame stir in lemon juice and sliced strawberries, stir until well coated 6. Spoon fruit into the center of each of the baked tarts and arrange onto individual dessert plates. Garnish with sifted powdered sugar and a dollop of whipped cream serve at once.
