Swiss Chard With Tomatoes And Eggs

Ingredients:

  2            bunches  swiss chard
  2        tablespoons  olive oil
  1                     onion -- chopped
  2             cloves  garlic -- minced
  1                can  plum tomatoes -- drained and chopped
  28            ounces  
  4              large  eggs
                        salt and pepper to taste
     1/2           cup  grated parmesan cheese
 

Preparation:

1. Wash chard. Remove ribs and discard. Chop. Place in a large saute plan and cook with the cover on until wilted. Remove from pan. 2. Heat oil in same pan over medium heat. Add onions and garlic and saute until golden. 3. Add tomatoes and cooked chard. Cook until bubbley. 4. Make 4 small depressions in tomato/chard mixture. Break an egg into each depression. Cover and cook until eggs are set. 5. Season with salt and pepper. Sprinkle with parmesan cheese.
