Classic Scrambled Eggs

Ingredients:

   9                    eggs
     1/4  cup           sour cream
   2      tablespoons   unsalted butter
                        salt and white pepper
     1/4  cup           chopped dill
   4      ounces        smoked salmon -- diced
                        fresh dill sprigs
 

Preparation:

Bring water to boil in bottom of double boiler. In top stir in eggs, sour cream and unsalted butter. Beat lightly to break up eggs. Turn heat down and over simmering water, stir eggs constantly until very lightly set, but still creamy=D1 about 8 minutes. Stir in salt and white pepper to taste. Add dill and smoked salmon. Mix well. Eggs will be creamy looking. Serve immediately with dill sprigs if you like. Approximately 8-10 minutes.
