Plums In Sherry-Custard Sauce

Ingredients:

   4      cups          purple prune plums -- sliced
   4                    egg yolks -- lightly beaten
     1/8  teaspoon      salt
                        sugar
   1      cup           milk
   2      tablespoons   fresh orange juice
   2      tablespoons   cream sherry
   1      cup           heavy cream -- whipped
 

Preparation:

1. Toss plums with 1/3 cup sugar and orange juice.

2. Combine egg yolks, 1/4 cup sugar, salt and milk in top of double boiler; cook and stir over boiling water until mixture thickens and coats spoon.

3. Remove from heat and cool.

4. Fold in sherry and whipped cream; gently fold in sliced plums.

5. Chill; serve in stemmed dessert dishes.
