Avocado Flan With Oyster And Corn

Ingredients:

  5                     eggs -- lightly beaten
  1              Quart  whipping cream
  4                     California avocados -- pureed (about 1 lbs)
  1         Tablespoon  sea salt
     1/2      Teaspoon  freshly ground white pepper
  18                    oysters -- poached
                        Cooked corn kernels -- as needed for
                        garnish
                        Chopped cilantro -- as needed for
                        Thyme sprigs -- as needed for
 

Preparation:

On low speed (take care not to create foam), mix eggs, cream, avocado, salt, and pepper. Divide among 18 four-ounce ramekins. Put ramekins in a shallow baking pan. Pour hot water around ramekins half-way up their sides. Cover with foil. Bake at 325 degrees until custard sets, about 25 minutes. Per Order: Garnish flay with 1 oyster, corn, cilantro, and a thyme sprig.
