Quick Steak Pizzaiola

Ingredients:

  1         tablespoon  olive or vegetable oil
  4                     minute steaks -- about 4oz each
     1/4      teaspoon  salt
     1/4      teaspoon  black pepper
     1/2         small  yellow onion -- chopped
  1 1/2           cups  low sodium crushed tomatoes
  2             cloves  garlic -- minced
     1/2      teaspoon  dried oregano -- crumbled
 

Preparation:

In a heavy, 12 inch skillet heat oil over moderately high heat until very hot. Sprinkle steaks with salt and pepper and cook 30 seconds on each side; transfer to a heated platter and keep warm. Add onion to skillet, saute 2 minutes. Add remaining ingredients; cook, stirring, until thick - about 5 minutes. Spoon sauce over steaks.
