Passover Pizza

Ingredients:

  1              pound  matzah -- broken up
                        salt & pepper -- to taste
  3                     eggs -- lightly beaten
     1/4           cup  vegetable oil
                        ***SAUCE***
                        vegetable oil
  1              large  onion -- chopped
  6             ounces  tomato paste
  12            ounces  water
  1           teaspoon  basil
                        salt & pepper -- to taste
  3               cups  shredded mozzarella cheese
                        ***TOPPING OPTIONS***
                        sliced mushrooms -- sliced olives,
                        anchovies -- chopped red or
                        green
                        pepper -- tuna
                        soak the matzah in warm water -- squeeze dry.
 

Preparation:

Mix together with eggs, salt, pepper, and oil. Press mixture out on an oiled pizza pan, leaving a little edge on the side. Bake in a 350F oven for 30 minutes. (Crust can be prepared ahead and frozen.) Saute onion and garlic in 1-2 Tbsp oil. Add tomato paste and water, season with basil, salt, and pepper. Cook for 3 minutes; pour over the crust. Sprinkle with cheese and garnish with any options as desired. Bake in onion until cheese is bubbly; 15 minutes.
