Crab Cakes

Ingredients:

  Amount  Measure       Ingredient -- Preparation Method

12        oz can        lump crab meat, drained 
1         Tablespoon    pesto sauce 
1         large         egg 
1         Tablespoon    heavy cream 
1/2       Cup           crushed pork rinds (measure after crushing) 
1         Tablespoon    mayo (optional) 
                        Old Bay Spice (to taste) 
                        dash of cayenne pepper
 

Preparation:

Melt 1 tablespoon of butter in a frying pan. Mix all the above ingredients thoroughly. Form into 4 patties and fry on medium heat until golden brown and crispy. Drain on paper towel and serve. Can be eaten hot or cold.
