Preparation:
Place all the ingredients except the butter and oil into a blender. Blend until smooth, pouring in butter. This takes only 15 or 20 seconds. Stir once to make sure it is all mixed.
Grease a well-heated griddle with vegetable oil. Pour out a scant 1/4 cup of batter. When the bubbles on top burst, turn the pancake. Continue, greasing the griddle as necessary.
Serve with Sauteed Apples, Hazelnut Honey Butter, and syrups and jams.
Makes about 18 4-inch pancakes. |
