Thai Red Curry Dish
 

Ingredients:

Chicken or Duck even for 4 servings
3T red curry paste
1-1/2T veg. oil
2-1/2 cups coconut milk
1/2 water or chicken stock
10 cherry tomatoes, 2 med halved
1 small can of bamboo shoot
4 kaffir lime leaves, halved
2T fish sauce
1/2t salt 
1t sugar
 

Preparation:

1. Put veg. oil into pot over med. heat and add red curry, add 3/4 cups coconut milk and stir to mix thoroughly. 2. Add chicken or duck and stir well until cook. Add remaining ingredients and simmer for 15 min., bring to boil and remove from heat.
