Squash Saute

Serves: 2
Quick and easy and a great taste for summer squashes!
 

Ingredients:

3 of any kind of squash - Mexican, yellow, zucchini, etc (I like to mix 2 Mexican with 1 yellow), sliced evenly to about 1/4" - 1/2"
Butter or margarine
Dried dill weed - good sized pinch
1 onion, peeled and diced large
Salt and freshly ground pepper to taste
 

Preparation:

Melt 1 Tbsp butter or margarine in a saute pan. Add onions, squash, dill, salt and pepper and a couple Tbsp water. Cover and cook over low-medium heat until squash are ALMOST done to your liking (I don't like mine mushy). Remove lid, cook off water and serve. Simple and easy
