Peppercorn and Pear Ostrich

Serves: 4
Ostrich strips, cooked in pear juice until tender. Green Peppercorns added. Cook until tender, and add canned pears. Serve on bed of sweet potato and feta mash.
 

Ingredients:

-Ostrich strips About 500G
-Can of pears with juice.
-Green peppercorns
-Onion
-Garlic
-Salt and Pepper
-Fresh Basil Leaves

-Sweet Potatoes
-Feta
 

Preparation:

Saute ostrich in olive oil, with garlic and onions, until browned. Add some of the pear juice from tin. Add a pear or two, and green peppercorns and leave to simmer. Keep adding water/pear juice until the meat is tender(about 30 min. Add the remainder of the pears, and add salt and pepper to taste. Add fresh basil leaves just before serving to give a strong taste. Sweet potato mash: boil sweet potatoes until soft. Mash and add butter and milk. Add the feta and serve.

 

Nutritional Information:

Ostrich is low in fat. Sweet potatos are great for you, better than usual potaoes.
