Shrimp and Couscous Salad

Excellent hot-weather meal. Easy to prepare, no esoteric ingredients, very satisfying.
 

Ingredients:

1         cup           cooked couscous/orzo/rice 
1/4       cup           low-fat mayonnaise
1/4       cup           lemon juice
3         Tablespoon    fresh, chopped dill
1/2       Teaspoon      salt
1/2       Teaspoon      pepper
1         pound         medium cooked shrimp/fake crabmeat
1/2       cup           diced red sweet pepper
14        Ounces        artichoke hearts, drained, chopped
 

Preparation:

1. Combine mayonnaise, lemon juice, salt and pepper, dll; mix well. 2. Put rest of ingredients in large bowl, toss; 3. Add mayonnaise mixture, toss. 4. Cover, chill for 2 hours prior to serving. Optional: match-stick carrots, corn may be added, for extra colour.
