A twist on the old favourite "Rocky Road". Moist, fluffy and smooth.
 

Ingredients:

2         Cups          Self-Raising Flour
1         Cup           Caster Sugar
1/4       Cup           Soft Brown Sugar
5         Tablespoons Soft Butter
4         Tablespoons Cocoa
1         Cup           Milk
1                       Egg
250       grams         Mini Marshmallows
150       grams         Nestle Melts
150       grams         Crushed Peanuts
1         Teaspoon      Bi-Carb Soda
1         Teaspoon      Vanilla

Icing / Middle

1 1/2     Cups          Icing Sugar
3         Tablespoons   Butter
2         Tablespoons   Cocoa
250       grams         Marshmallows (Regular)
 

Preparation:

* Mix all cake ingredients in a large bowl for 2 – 3 minutes. * Divide cake mix between two 17 cm greased cake tins. * Bake in a moderate oven for 25 – 30 minutes. * When cool, turn out onto cake rack. * Spread roughly 1/4 cup of Icing onto the bottom of 1 half, and 1/4 cup icing onto the top of the other. * Place the regular marshmallows upwards on the iced top, and place the other half on top. * Spread the rest of the icing on top of the cake, and dust with Icing Sugar. Icing: Mix all Icing ingredients except marshmallows until smooth.
