Serves: 12 1/2-cup servings
A cool, refreshing & absolutely delicious way to use mangoes, my favourite fruit. The riper the fruit the sweeter/stronger the scent & flavour. Intense sun-yellow colour.(Also good with strawberries if mangoes unavailable.)
 

Ingredients:

1 1/3     cup           sugar
1 1/3     cup           water
1/4       cup           freshly squeezed lime juice
2         cups          fruit puree
 

Preparation:

In small saucepan over medium heat, cook sugar and water, stirring constantly just until mixture boils. Remove from heat and cool slightly, then chill in fridge. In blender, puree fruit until smoth. Add lime juice and chilled sugar syrup; process until smth. Pour into a large metal pan or bowl; freeze until solid. Remove from freezer; process in blender until creamy. Refreeze until firm. Makes 12 1/2-cup servings. Melts quickly. Nice alone or with small scoop of vanilla ice-cream. Enjoy!
