Apple Pie Quiche

Ingredients:

4 eggs
1/2 cup 
2 tsp sour cream
1/12 cup shredded Cheddar cheese
2 tsp Splenda
1/2 tsp cinnamon
1 large apple, sliced thinly (granny smith works best)
Cooking spray
 

Preparation:

Combine all ingredients except apples and 1/2 cup cheese in blender on high speed until frothy. Spray 9 inch glass pie dish with cooking spray. Arrange apple slices in bottom; pour half the egg mixture over apples. Layer remaining apple slices and egg mixture; top with remaining cheese. Bake at 375 for 30 minutes or until knife inserted in center comes out clean.
