A curry power or a marinade for meat dishes, (it may work on fish, feedback required on fish.) I recommend you make the Massala & use it to Marinade your meat for four hours before cooking.
 

Ingredients:

2         Teaspoon      Corriander Seeds
1 1/2     Teaspoon      Cumin Seeds
3                       Green Cardomon Pods (de-husked)
1         Pinch         Onion Seeds
1-2       Teaspoon      Tumeric Powder
2         centimeter    Dried Ginger
2-3       centimeter    Dried Cinamon Bark
Optional if not using fresh chilli: 2-3 tsp of dried chilli
 

Preparation:

1 Ground the Ginger in a Pestle and Morter until fine, removing the husk at the end. Empty to a seperate dish. 2. Ground the Cinnamon and add to the Ginger. 3. Grind the Cardomon, Corriander and Cumin until fine. 4. Add back the Ginger and Cinnamon and blend together with the Tumeric. If you are adding Chilli add now.
