Lemony Garbanzo Spread

Ingredients:

  15      ounces        garbanzo beans - -- (1 can), rinsed,

   2                    garlic cloves
   1                    green onion -- cut into 1" pieces
   2      tablespoons   fresh lemon juice
   1      tablespoon    extra-virgin olive oil
     1/4  teaspoon      salt
     1/8  teaspoon      freshly-ground black pepper
   2      tablespoons   plain yogurt
 

Preparation:

Process all the ingredients in a food processor or blender until smooth. Transfer to a serving bowl. The spread will keep for several days in the refrigerator. Cooks Tip: Spice up this basic spread by adding your favorite spice or herb. Cumin or curry adds wonderful flavor. Add chopped fresh herbs for a great herbal spread. Comments: This traditional Mediterranean garbanzo bean puree has added zest to centuries of bread eating and enjoyment. You may also enjoy it as a dip for crisp vegetables.
