Smoky Black Bean and Corn Chowder

Ingredients:

     1/2  cup           yellow onions -- chopped
   4      tablespoons   butter or margarine -- melted
     1/4  cup           all-purpose flour
     1/4  teaspoon      black pepper -- freshly ground
   1 1/4  teaspoons     salt
   4      cups          milk
  17      ounces        whole kernel corn -- canned, drained
   4                    smoked sausage links -- sliced
   8      ounces        black beans -- canned, drained
 

Preparation:

In a saucepan, sauté onion in butter until tender but not brown. Stir in flour, salt and black pepper. Add milk, and bring to a boil, stirring constantly until thick and bubbly, about 1 minute. Stir in drained corn, sausage slices and drained black beans. Reduce the heat and simmer for 10 minutes.
