   3      pounds        ground pork shoulder -- add:
   2      teaspoons     salt
   1 1/2  teaspoons     cumin
     1/2  teaspoon      coriander
     1/2  teaspoon      garlic
     1/2  teaspoon      cayenne
 

Preparation:

This is what my DH asks for whenever we get fresh ground pork! Cook it up just like patty sausage. Very Southwestern! Sometimes, just for kicks, I add 1/2 tsp ginger to it. It gives a different heat than the cayenne.
