Corn And Grilled Pepper Relish

Ingredients:

   1      cup           roasted corn kernels
     1/2  cup           finely diced grilled red bell pepper
   1      tablespoon    finely diced red onion
   1 1/2  tablespoons   balsamic vinegar
   1 1/2  tablespoons   coarsely chopped cilantro
     1/2                jalapeno pepper -- minced
   1 1/2  tablespoons   olive oil
                        salt -- to taste
                        freshly ground black pepper -- to taste
 

Preparation:

Combine the corn, pepper, onion, vinegar, cilantro, jalapeno, and oil in a bowl and season to taste with salt and pepper. About 2 1/2 cups of relish.
